Cuckoo For Coconut Oil Giveaway

From the moment I unscrewed the lid on the jar, I knew I was in for a treat. The smell! Unbelievable. I never had that experience before when opening a jar of unrefined coconut oil. This was my first encounter with Tropical Traditions Gold Label Virgin Coconut Oil. I stuck my spoon right in.
Yowza! I think I heard the "Hallelujah Chorus" from Handels Messiah as the oil melted in my mouth. "Holy shitaake! Whats in this?"
Ingredients: 100% Organic Virgin Coconut Oil (USDA certified organic)
Ive had other brands that listed the very same ingredient, so what gives? How come this stuff tastes like "gold"?
After doing some poking around on the companys website, I discovered that all of their coconut oil is made by hand on Mt. Banahaw in the rural Philippines. The volcanic soil of Mt. Banahaw makes these organic coconuts some of the most nutritionally rich coconuts in the world! Coconuts are hand-picked from small family farms, and production begins within 24 hours of harvest.
A couple of years ago, this rural area was having problems with its water sources. Water is needed to make the oil. So, using Filipino ingenuity, they started collecting and using the pure coconut water from inside of the coconuts instead. The fresh coconut meat gets shredded, and then cold-pressed using the coconut water to make coconut milk. The milk is then allowed to sit for about half a day, while the oil naturally separates from the heavier water. The oil then gets filtered from the solid curds.
Tropical Traditions Gold Label Virgin Coconut Oil is slightly heated at the end of the processing, prior to packaging. This is to ensure that no moisture is present, and to draw all the oil out of the curds. This heat is very low – less than boiling temperatures – and is for a very short duration (10-15 minutes). No chemical or high-heat treatment is used. Commercial coconut oils, by contrast, undergo steam deodorization at temperatures of around 400 degrees.
Well, Im sold. This stuff tastes unlike any coconut oil Ive had before. Trust me when I tell you, its delicious as is, eaten right off the spoon. Ive also used it in place of olive oil in my Sprouted Hummus, thrown a dollop into my Kiwi Smoothie, and drizzled it along with some fresh lime juice over my Mermaid Pasta With Veggies. Mercy, mercy me. [I should mention that coconut oil will solidify under 76 degrees. Just put the jar in a pan of warm water to reliquefy.]
The couple who started the company in the Philippines, Brian & Marianita Jader Shilhavy, have written a book entitled Virgin Coconut Oil: How it has changed peoples lives and how it can change yours! I received a complementary copy and Im thoroughly enjoying it. Not only am I getting loads of ideas from the more than 85 recipes included, but Im learning all about the health benefits of virgin coconut oil. Theyve broken the book into sections — like Diabetes, Crohns, Fibromyalgia, Hypothyroidism, Weight Loss — and present the research as well as personal healing testimonies. Theres even a section on Pet & Animal Nutrition.

Back to School Slow Cooker Menu ravioli lasagna and pizza chicken
Im done with summer.
The school can have my kids back.
Im ready to get on track with routines, schedules, meal-planning, and quiet.
mostly the quiet.
Ive written about my love for meal planning in a bunch of spots. If youre looking for a how-to, you can read this post, or this one, or this one.
If youd like inspiration, Laura, from Im an Organizing Junkie hosts Menu Planning Monday each week (I have a webTV interview with Laura, here).
Here are two super simple weeknight meal recipes. Ill throw them in together instead of writing up separate posts since they are so easy.
oh! the verdicts on each were great. The kids ate every last drop, and Adam did the dishes. :-)
Slow Cooker Pizza Chicken
4 chicken breast halves (or about 6 thighs)
1 green bell pepper, seeded and sliced
1 small yellow onion, peeled and diced
1 (14-ounce) jar pizza sauce
20 pepperoni pieces (read labels carefully for hidden gluten, I used Hormel)
4 cups shredded mozzarella cheese
I used a 4-quart slow cooker. Put the chicken into your cooker and top with the cut up veggies and pizza sauce. Put the pepperoni pieces evenly over the top, and add lots of cheese. Cover and cook on low for 6 hours or about 4 on high.
Slow Cooker Ravioli Lasagna
Id wanted to test out the ease of ravioli lasagna for a while, but couldnt find gluten free ravioli that fit the budget. The ones pictured are from Mariposa which has a kiosk in the Ferry Building in SF. I have also seen frozen gluten free ravioli at Costco. If you cant find some locally, check with your local GIG group for suggestions.
If you arent gluten free, use whatever youve got in the house!
1 pound lean ground beef, browned and drained
1 (28-ounce) jar prepared pasta sauce
25-30 frozen cheese or meat ravioli (I used gluten free; please mind labels!)
2 cups shredded cheese (I used Italian blend-- mozzarella, parmesan, etc)
2 tablespoons warm water
Use a 4-quart slow cooker. After browning the meat in a skillet, drain well and add the pasta sauce (save the jar!) to the meat in your saute pan. Stir to combine.
Scoop a large spoonful of meat sauce and spread into the bottom of an empty slow cooker. Add a layer of frozen ravioli. Then add another layer of meat sauce. Continue layering until you run out of ravioli and sauce. Sprinkle cheese evenly all over the top.
Put 2 tablespoons of water into the empty pasta sauce jar, and shake. Pour this water over the top of your "lasagna."
Cover and cook on low for 6-7 hours, or on high for about 4. Your lasagna is done when the pasta on the ravioli is tender and the filling is heated through.
School starts for us on September 6th. I love having the kids home with me, I really do. But weve done summer. Weve had the pool parties, the sleep overs, the camping trips, the roadtrips, and the all-day-tv veg days.

CrockPot Halibut in White Sauce with Broccolini
Day 274.
Good morning! I made a halibut in white sauce for Sunday lunch. It was good!!
I really dont think Ill go back to the stove top or oven---its just too easy in the crockpot and I can not get over the no-fish-smell.
The Ingredients.
24 ounces halibut (or other white fish like tilapia or fillet of sole)
2 tablespoons all-purpose flour (we are gluten free, so I used a GF flour mix)
1 tablespoon white sugar
1/4 cup butter, melted
1/3 cup white wine (or you can use chicken broth)
2/3 cup milk (mine was fat free)
2 lemons, 1 juiced, 1 for garnish-
aluminum foil
The Directions.
Microwave butter in a glass bowl, and whisk in the flour. In a separate bowl, combine the milk and the white wine. Slowly add the flour mixture to the milk and wine, stirring the whole time. Squeeze in the lemon. If you dump the cold milk and wine into the flour mixture too quickly, the flour and butter will separate again, and the butter will harden and create weird gloppy lumps that will float to the surface.
Ask me how I know this...
Add the sugar to the sauce mixture. Lay out a length of foil onto your kitchen countertop and place the fish into the middle. Spoon the sauce on top. fold the foil over and crimp the edges. Rinse the brocollini under cold water and place that into a separate length of foil, then fold over the foil to make a separate fully enclosed packet. Place this on top of the fish.
Cover your slow cooker and cook on high for about 2 hours, or until the fish flakes easily with a fork.
The Verdict.
I liked this, and did add a bit of salt and some extra lemon at the table. Although I cooked the brocollini separately, I do think if you wanted to just do one packet youd be fine to throw everything into the same foil.
Fish in the crockpot is WONDERFUL!

Slow Cooker Baked Potato Soup Recipe
Baked potato soup is complete and utter comfort food. There are cheater ways to make it with boxed potato flakes or hashbrown potatoes from the freezer section, but I wanted to see if I could make an awesome all-from-scratch soup that was just as good, if not better!
We all really liked this soup---the kids ate a ton, and we have a bunch leftover. I made a big batch so wed have leftovers in the freezer. Id guess this serves 10.
The Ingredients.
5 lbs potatoes, peeled and diced in 1 to 2-inch chunks
1 teeny onion, diced (a bit less than 1 cup)
4 cloves garlic, minced
1 teaspoon seasoned salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper
2 quarts chicken broth
2 (8-ounce) packages cream cheese, to add at the end
--crumbled bacon and green onion or chives as garnish (optional)
The Directions.
Use a 6 quart or larger slow cooker. Peel and dice the potatoes, and put them into the stoneware. Add onion and garlic. Sprinkle in the seasonings, and pour in the broth. Cover and cook on low for 8 hours, or on high for 4. The potatoes should be fork-tender. You can use a potato masher to mash the potatoes in the soup, or a hand-held immersible blender. I suppose you can also leave the potatoes in chunks, if you really wanted, but I wanted a smooth soup.
After smashing the potatoes, crumble in both packages of cream cheese, and put the lid back on. Cook on high for about 30 minutes, or until the cream cheese is completely dissolved. Stir a few times during the 30 minutes.
Garnish with crumbled bacon, green onion or chives, and Id assume cheddar cheese would be just delightful.
The Verdict.
When I first started hanging out on the internet, I was surprised at how much bacon talk there was. Everywhere I turned (clicked), it seemed there was somebody else going on and on and on some more about their love for bacon.
Since I dont eat pork, I really didnt get it, and just figured it was a weird internet thing.
But yesterday I figured out the secret to really good turkey bacon. Fry it in a ton of butter. Now I think I might sort of get it. Although Im not terribly pleased with how messy it is....
anyhow, this is a fantastic soup, and the bacon on top really seals the deal. My kids both ate a bowl when it was first finished around 4pm, and another later in the evening.
Were going to have BLTs with the leftover bacon for lunch. or maybe breakfast. Im excited.

Roasted Garlic Mashed Potatoes in the Slow Cooker
This means we are eating an awful lot of soft food.
Garlic mashed potatoes were requested, and I was on a mission to see if I could make the whole dish directly in the slow cooker, without having to boil water or pull out a colander.
It worked! Youre going to love these potatoes ---- the garlic roasts along with the potatoes in the cooker in a bit of chicken broth, then gets mashed right on in with both cream and Parmesan cheeses.
The Ingredients.
serves 8-10
5 pounds red potatoes, mostly skinned and quartered
20 cloves of garlic, peeled (about 2 heads)
1 cup chicken broth (you can use vegetable)
1/2 block (4 ounces) of cream cheese, softened
1/2 cup grated Parmesan cheese
(salt to taste if needed at the table)
The Directions.
Use a 6-quart slow cooker. Place the peeled and quartered potatoes into an empty slow cooker. I left the skin on a few of the potatoes for added color and texture; its completely up to you. Toss in the garlic cloves. Pour in chicken or vegetable broth. Cover, and cook on low for 7 to 8 hours or on high for 4 hours.
Add the cream cheese to the pot, and use an immersible hand blender to mash the potatoes, or you can use a whisk or potato masher if youd like a chunkier finished product. Stir in the Parmesan cheese. Salt to taste, if necessary, at the table.
The Verdict.
Delicious, creamy, and garlicky. The garlic is roasted, so the flavor is mellow and slightly nutty. There isnt any heat or bite from the garlic whatsoever, its incredibly smooth. We brought this to a friends house for dinner and it paired beautifully with oven roasted tri-tip and asparagus.
enjoy!
other garlicky goodness:
20-40 clove garlic chicken
roasted garlic
super duper garlic dip
roasted garlic spoonbread
honey garlic chicken
garlic baked potatoes
broccoli with roasted garlic and hazelnuts

CrockPot Indonesian Chicken Recipe
Day 198.
Suzanne emailed me this Indonesian Peanut Butter Chicken recipe last week, and I immediately printed it out. I had everything on hand, and knew that it was something that I needed to make.
So I did.
In the CrockPot.
Suzanne said that she had originally gotten it from Leanne Elys book, Saving Dinner. I subscribed to Leannes dinner service emails for a while when I was first married---I liked the variety of the dishes, and it was a valuable service for our family while we were learning how to meal plan.
The Ingredients.
--enough chicken parts to feed a family of 4. I used 17 frozen drummettes and wings.
--2 T soy sauce (La Choy and Tamari wheat-free are GF)
--2 chopped cloves of garlic
--1 1/2 t sesame oil
--1/4 t cayenne pepper
--1/3 cup peanut butter
--1/2 t ground ginger
--garnish with sesame seeds and lime wedges; optional
The Directions.
--put the peanut butter into your crockpot and turn it to high so it can begin to melt
--add the other sauce ingredients
--stir to mix
--add your chicken; toss to coat. My chicken was frozen solid and kind of all stuck together. It didnt seem to matter.
cover and cook on low for 6-8 hours, or on high for 4-5. This is done when the chicken is cooked through and has reached desired tenderness. The longer you cook it, the more tender it will become, but it may fall off the bone if you cook too long.
If your crockpot isnt at least 2/3 full, keep an eye on it so the peanut butter doesnt burn. You may need to stir a few times.
The Verdict.
This was pretty good, and the kids liked the little drumsticks a lot. Adam and I both thought that it needed either honey or sugar and some red chili pepper flakes. I dont know if Leanne was assuming that we were going to use natural peanut butter, or the sugary kind. If I made this again, Id add 2T of either white or brown sugar. And Id sprinkle red chili flakes on the grownup portions.
I really liked the squeeze of lime.
Thank you SO much, Suzanne! This was a great middle-of-the-week dinner for us, and it took about 6 minutes to prepare. Other than the garlic, there was no chopping---yay!
If youd like to go vegetarian, I made peanut butter tofu earlier in the year with a slightly different peanut sauce. I remember liking it lots.

CrockPot Shepherds Pie Recipe
Day 271.
Last week Maura emailed and asked if I had a crockpot shepherds pie recipe. I didnt. I didnt even have a regular shepherds pie recipe, and actually wasnt too clear on what went into one.
She sent me a base recipe, and I made it the other night in the crockpot. I also made a box of macaroni and cheese (Annies gluten free, in the bright blue box) for the kids---just in case.
They ate the mac and cheese, but the stars must have been in a funky alignment because they also each ate a bowl of the shepherds pie.
I was astonished.
The Ingredients.
--3 cups leftover mashed potatoes
--1 lb ground turkey or beef
--2 cloves garlic, chopped
--2 cups frozen vegetables (I used roasted corn and peas)
--1 medium onion, chopped finely, or 1 T onion flakes
--1/2 tsp seasoned salt
--1/2 tsp onion powder
--1/4 tsp black pepper
--1/4 tsp paprika (then a bit more for garnish)
--1 cup water
--2 cups shredded cheese
The Directions.
I used a 4 quart crockpot---it was the perfect size. A larger will work, but it will cook faster.
Brown the meat and onion on the stove, and drain any fat. Toss the meat with the spices and garlic---I didnt but next time Id probably put the garlic and spices in with the meat in the frying pan, it would be easier.
Spray the inside of your crockpot with cooking spray. Put the meat in the crockpot and stir in the frozen vegetables, and a cup of water. Add two cups of cheese on top. Press the mashed potatoes down on top of the cheese and meat. Sprinkle with a bit of paprika.
Cover and cook on low for 6 hours or high for about 3, then remove the lid and cook on high for 30 minutes to release the condensation and allow the potatoes to brown a bit on top. Everything is cooked already, so youre really just allowing the flavors to meld and the potatoes to crustify.
Someone will ask about using raw meat. Im sure it will work, but I have a swimming-in-fat-and-grease phobia, so I didnt do it. If you are going to try, Id cut the water down to 1/2 a cup and remember that the potatoes might not get the type of crust you are looking for unless you vent the crockpot with a chopstick or wooden spoon.
The Verdict.
I will make this again. I loved it that all of us ate the same thing at the table, and the kids really enjoyed the meat and potatoes.
Thank you, Maura!

Baked Brie CrockPot Recipe
Day 208.
Happy Saturday! One of my most-requested and best-received crockpot appetizers is brie with candied pecans and cranberries. I like making it, because its so gosh darn easy and because it seems more involved and elegant than it really is.
I was reminded about baked brie in a pastry crust last week when I was thumbing through and old cookbook put out by Pillsbury. I had a wheel of brie in the fridge, and thought I might as well try to do it in the crockpot.
The Ingredients.
The super easy way:
--a wheel of brie
--refrigerated crescent rolls
The Gluten Free Way (or a home-made way of making crescent rolls):
from the best crescent roll recipe ever, thanks to Delightfully Gluten Free
--1 /4 cup butter
--3/4 cup small curd cottage cheese or sour cream
--1 cup Gluten Free Flour mix (I used Pamelas) or All-Purpose Flour
--1 t xanthum gum (omit if using AP flour)
--1/8 t salt
--1/4 t cream of tartar
--1/2 t baking soda
--1 T sugar
--wheel of brie
The Directions.
If making the dough at home, follow the tutorial from the Delightfully Gluten Free site. I used sour cream the first time I made this dough, but used the cottage cheese this time. Both types of dough were delicious.
Roll out the chilled dough or crescent rolls on a cutting board. Dont tear apart the little crescent
Cover and cook on high for 3-4 hours, with a toothpick wedged in the cover for just a bit of a vent hole. I usually use a chopstick, but tried a toothpick this time. I did get some condensation on the lid, but was pleased with the results. Your brie will be done when the dough has browned on top, and begun to pull away from the sides of the crockpot, or dish.
The Verdict.
Oh Em Gee. Delicious, and very fun to make and present. I am overjoyed to have found this gluten free dough, and was so happy to give a nice big slice of this to my kids. They hated the cheese but liked the dough.

Slow Cooker Peanut Butter Cup Cake Recipe
In my mind, there is no better pairing than peanut butter and chocolate. I have perfected the eating of the peanut butter cup---I take my time and eat all the chocolate first, and then eat the naked lump of peanut butter.
Its the little things make me happy. This pudding cake makes me happy!
So you should make it.
The directions sound complicated, but I know you can do it.
I used a 4-quart slow cooker, and the batter fit perfectly, and I was really happy with how thick the cake turned out. If you only have a 6-quart, Id put an oven-safe casserole dish all the way into your slow cooker, and load the ingredients into it. If the cake puffs up and overflows a bit while cooking (I dont think it will), its okay, because the goo will stay in your slow cooker.
The Ingredients.
serves 8
1 cup all-purpose flour (I used Pamelas Baking Mix)
1 cup sugar (divided. this is important, dont just start dumping, read on!)
1 teaspoon baking powder (even though Pamelas has baking powder in it, I used this amount)
1/2 teaspoon kosher salt
1/2 cup creamy peanut butter (unless youre a rebel. then use chunky)
1/2 cup milk (I used fat free cows. to keep it light. HA!)
1 tablespoon canola oil
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
1 cup boiling water
The Directions.
Use a 4-quart slow cooker coated well with cooking spray. In a mixing bowl, combine flour, 1/2 cup sugar, baking powder and salt.
In the microwave, melt peanut butter for about 30 seconds, and then add to the mix along with milk, oil, and vanilla. Stir really well to combine.
Spread this mixture into the bottom of your slow cooker.
In a separate bowl, mix together cocoa powder, the remaining 1/2 cup of sugar, and 1 cup boiling water (be careful!) Pour this evenly over the peanut butter batter in your cooker.
Cover and cook on high for 2-4 hours, or until the top has set and an inserted toothpick (into the cake--underneath the cake is molten chocolate) comes out clean. Let the cake sit uncovered in an unplugged crockpot for about 20 minutes, then serve warm in dessert bowls.
The Verdict.
If you like peanut butter with your chocolate, or chocolate with your peanut butter (best ad campaign EVER), you will love this cake. The peanut butter cake floats to the top (totally trippy), leaving a layer of molten chocolate gooeyness underneath.
like peanut butter?
peanut butter brownies
peanut butter pork
peanut (not brittle) candy not peanut butter. but SO tasty.

chocolate frito candy to die for.

In winter adjust your diet!
Our winter feeding helps us fight the cold, but the winter fatigue and depression.
Should you eat more when its cold? What are the foods you should be wary and those we should focus on? Can you drink a glass of alcohol to rejuvenate?
When its cold, is it necessary to eat more?
The cold should not be an excuse for our mouthful.
Indeed, our lifestyle (heating, transport ??) does not need to eat more when its very cold.
However, our desires are different in winter.
We aspire to more substantial dishes and simmering on the stove. If we should not go without, it should however adjust our menus accordingly, and if necessary, in case of trouble weight, reduce portions.
What foods should be preferred in winter?
What is needed is targeting a balanced diet:
Always leave enough room for vegetables, cooked and raw, including soups and salads.
Remember also the fruit, such as stewed or dried fruit, excellent for their vitamin, fiber and energy.
Dairy products, too, must be well proportioned. Recall that a particular portion of cheese per meal is sufficient, even every day. It must be taken into account when a quiche is prepared, or other preparation that already contains cheese ... ??
Similarly, one serving a day of meat, fish, ham or egg, is sufficient, even in winter.
Of course, throughout the year, industrial fats are hidden in moderation (butter, cream ??) and especially the hidden fats (pastries, cakes, cookies, ?? industrial flat).
As for the small glass of alcohol to warm up ...
Of course, mulled wine, hard liquor, liqueur are effective to rapidly increase body temperature.
However, alcohol has the disadvantage of tiring the body.
In other words, the boost that will provide much alcohol will be short-lived. This technique is not recommended

Does Your Food Travel More Than You Do
Here in But you could have blown me over with far less than a strong noreaster today when I started looking at the labels on my produce. Ever pay any attention to those annoying little things you have to peel off your fruits and vegetables? Me neither, but you can bet I am now and so should you. We may be surprised to find that a lot of what we buy isnt grown anywhere in the United States, warmer climate or not.
Until recently, most produce in major grocery stores was anonymous. The United States Department of Agriculture issued new country of origin labeling (COOL) regulations that went into effect on September 30, 2008. Suppliers and retailers are now required to provide COOL for a wide range of products, including fresh and frozen beef, pork, lamb, and chicken, as well as fresh and frozen fruits and vegetables.
How COOL Is This?
I still couldnt find labels on all of my produce, but lets take a look at what I did find. Heres a list of fresh (and I use that term loosely) produce I ate for breakfast and lunch, where it originated from, and the number of miles it traveled to get to me. It should be noted that the mileage I list is direct from point A to point B. In all likelihood, my produce traveled considerably farther before gracing my table.
Bananas – Ecuador – 2,886 miles
Blueberries – Chile – 5,177 miles
Apples – Washington – 2,024 miles
Oranges – Florida – 817 miles
Avocado – Florida – 817 miles
Kale – California – 2,088 miles
Collards – California – 2,088 miles
Cucumbers – Mexico – 1,917 miles
Tomatoes – Florida – 817 miles
Peppers – Mexico – 1,917 miles
Onion – Washington – 2,024 miles
So by the time I had finished lunch, my food had traveled 22,572 miles. Thats almost one full trip around the globe! Anyone else see the absurdity in this?
Frequent Fliers
Some food items, such as bananas, have always been imported and have wide consumer acceptance. The most obvious sources for out-of-season produce are Mexico, and Central and South America.
Check out this great resource from The Leopold Center for Sustainable Agriculture that shows common origins of more than 95 different produce thats shipped into or across the United States each year.
Heres a list of commonly air-freighted fruits and veggies and their country of origin:

The Real Price of Imported Food
Trucking, shipping and flying in food from around the globe takes a toll on the environment and on public health. The National Resources Defense Council (NRDC) did a study analyzing the transportation-related impacts of importing agricultural products into Californias three largest ports – Los Angeles, Long Beach and Oakland.
The NRDC study showed that in 2005 alone, approximately 3 million tons of fruits, vegetables, cereals, nuts, and wine were imported from overseas into California by ship, airplane and truck. The California Air Resources Board estimates that 2,400 premature deaths, 2,800 hospital admissions for asthma, and approximately 16,870 missed school days were attributable to direct and indirect exposure to diesel pollution from freight transport activities within the state.
Almost 250,000 tons of global warming gases released were attributable to imports of food products — the equivalent amount of pollution produced by more than 40,000 vehicles on the road or nearly two power plants.
Keep in mind, were just talking about California here. Pretty eye-opening, huh?

Think Global, Eat LocalIt stands to reason that produce thats traveled thousands of miles is not going to taste as fresh or be as nutrient dense as something thats just been picked this morning. And yet, when we shop at the grocery store today, we dont bat an eye at the sight of strawberries in the winter or perfect tomatoes from Holland. In the space of a generation, weve become accustomed to eating food thats never grown roots in local soil.
Its time we start paying attention to those little labels on our fruits and veggies to see how far our food traveled and begin asking our favorite grocery stores and restaurants to carry more local foods in season. We can support our local farmers by purchasing produce at a farmers market, or becoming a shareholder in a CSA. Check out Local Harvest to find one in your area. Better still, lets put our hands in some dirt and plant and cultivate our own food.

Maple Dijon Chicken CrockPot Recipe
Day 335.
I think anything with the word "dijon" in the title instantly sounds exquisite and marvelous---even though its only a $2.99 condiment. Dijon is the show-off in the mustard family.
Carissa sent me this recipe on my birthday, and I printed it out right away. I was pleasantly surprised to have everything in the house already (well, minus the bay leaves).
The Ingredients.
--1 lb chicken pieces (I used frozen breast tenderloins)
--1 cup chicken broth
--2 sweet potatoes, peeled and chopped
--1 onion, chopped
--2 T dijon mustard
--3 T maple syrup
--3 cloves garlic, chopped
--2 bay leaves
--1 tsp thyme
The Directions.
I used a 4 quart crockpot---it was a good size. This fed the four of us with a tiny bit left for lunch the next day. If you have a large family or would like leftovers, double the quantity.
Put the chicken into the bottom of your crockpot and toss it with the thyme, maple syrup, and dijon mustard.
Peel and slice the sweet potato, and add to the pot. Add the onion and garlic. If you dont want your onion to have a crunch, put it at the bottom of the crockpot; otherwise on top of the chicken is fine.
Pour in the chicken broth. Add the bay leaves.
Cover and cook on low for 6-8 hours, or on high for 4-5. This is done when the chicken is cooked through and the vegetables reach desired tenderness.
The Verdict.
Very good, and quite moist. The picture up above is a bit misleading----I had enough juice in the pot to ladle over the vegetables and some leftover white rice. The sweet potato fell apart a bit, so some were more mashed than chunky. The kids each ate 2 of the breast tenderloins, and a bit of sweet potato.
Thank you, Carissa --I really liked this chicken a lot-- I enjoyed the flavor and appreciated how easy it was to throw together.

To lose weight do not especially diet!
With the holidays looming, the plans have resumed their neighborhoods in womens magazines.
The question is which one to choose ...
No, answers tit and tat Patrick Van Alphen, nutritionist.
A diet, the best way to grow
A diet, the best way to grow
Ask all nutritionists according obese people their opinion on the plans, they will answer overwhelmingly the same.
To know that all their patients have tried plethora of diets and that they do not help to lose weight ... On the contrary!
Getting to diet implies making efforts temporarily, which does not lose weight permanently!
Do not be fooled by fad diets that promise you to lose 5 kg in two weeks.
To lose weight, you must learn to eat better
The solution to lose your extra pounds once and for all?
Review your way to eat, move and be patient.
Before age 40, by changing your eating habits, you can expect to lose 2-4 pounds a month, after rather bet on 1-2 kilos.
A consequent loss involves too much food restriction would result in hits by a weight gain when you return to a normal diet.
How should we eat?
The question is what is meant by "eating well"!
Patrick Van Alphen, then return to the diet of our ancestors. That is to say?
Eat like a king in the morning, lunch must be the richest meal of the day (wholemeal bread, eggs, omega3, ham, dairy products).
Eat lunch like a prince: dinner is a complete meal with meat, vegetables and moderately starchy.
Eat like a poor night: dinner should be light, low in carbohydrates. Soup greens with a little meat and a couple of slices of wholemeal bread in winter or a summer salad, for example.
Meanwhile, get used to banish any sugar-rich food from her diet.
To lose weight, you have to move, move, move!
To see the pounds disappear, eating well is not enough.
We must also spend the calories you swallow. This does not necessarily mean you have to register in a gym. A fortiori if running on a treadmill or sweat group is not your cup of tea.
You can simply make a habit not to make your life easier:
Go to work by bike or on foot,
Do not take the elevator,
On weekends, enjoy long walks or bicycle,
Go to the rink
...dropoff Window
In short, move when the opportunity presents itself.

Exercises to reduce Tyres of Stomach Belly Fat Reduction
Exercises to reduce Tyres of Stomach
Tyres of Stomach are really something to worry about. You should try to get rid of them as soon as you notice them. This belly fat is a normal phenomena caused due to more intake of calories than what you consume. You can reduce this belly fat or tyres of stomach by doing some exercises on regular basis and consuming more calories than you intake. You can easily reduce 1 pound weight in a week if you consume 500 calories more than what you intake. It means that 3500 Calories equals one pound of body weight. But you cant reach this target if you dont exercise. According to U.S. Department of Health and Human Services guidelines 150 minutes of moderate-intensity cardio is essential for a normal man. If you want to loose weight then it should be 150 to 300 minutes. Plus you should also do strength training for two days in a week.
Moderate-Intensity Cardio Exercises to reduce Tyres of Stomach
Moderate-Intensity Cardio include walking, running, biking, step aerobics, jumping rope and swimming. These are some basic things that everybody should do remain healthy. But if you want to reduce the tyres / belly fat then you should do it in excess (around 300 minutes per week), which means around 50 Min daily. If you are ready to do it then you will easily loose 1 pound every week.
Strength Training and reducing Stomach Tyres
Strength training activities include traditional weightlifting and body-weight exercises. Its not necessary to do it every day. But a minimum of two days is necessary. Its not necessary to do a abs workout. You can do mixed exercises for different muscles. Our target is to burn calories.
As you will burn extra calories which are deposited on different parts of your body as fat, you will notice that you are notice the change. But make sure that you have not increased your intake, else there will be no difference. If you burn extra calories, then fat from all parts of your body will reduce. So your stomach tyres will also reduce.

Little Dipper Cranberry Orange Dip
Day 362.
Raise your hand if you got a Little Dipper for the Holidays.
The Little Dipper is so much fun----here are all of the dips and things Ive made this year: Little Dipper recipes. Except the chicken and brown rice casserole. I have no idea how that showed up in there. Weird.
Jen T. sent me this recipe, and the kids and I had it for lunch the other day. When its cooked, it looks like a big pile of fluffy snow.
The Ingredients.
--8 oz cream cheese
--2/3 cup shredded swiss cheese
--2 T apple juice
--1/2 tsp orange zest
--1/2 cup sweetened dried cranberries
The Directions.
Plug in your Little Dipper to get it started warming up. Shove the block of cream cheese down into it. You may need to squish it in with a spoon. I promise it will fit. Shred the swiss, and add it. Grate the orange and add the zest. Add the apple juice. Cover and let it cook for 45 minutes to an hour. When the cream and swiss cheese have fully melted, stir in the dried cranberries.
Serve with your favorite crackers or apple slices. Were really liking the new nut and rice crackers Blue Diamond puts out.
The Verdict.
Delicious. The original recipe called for 1 tsp of orange zest, but were not big fans of orange zest, so I only added 1/2 tsp. It was still plenty zesty for us, and I probably could have omitted it all together for us. But then I would have needed to change the name.
The swiss and cream cheese melted together beautifully and were a delicious combination.
Thank you, Jen!

Gluten Free Oreo Cheesecake Slow Cooker Recipe
Youve been really good lately. Youve been so good you should make an Oreo Cheesecake.
Hopefully youre more patient than I am and wait until its fully cool before trying to cut into it to post a photo on the internet.
Ever since I made traditional and pumpkin cheesecake, Ive promised the kids Id make an Oreo version. I finally hunted down gluten free chocolate sandwich cookies we could all eat (I used the Glutino brand) and am so glad I did. Youre going to need the entire package of cookies, so buy two if you want to sneak any.
The Ingredients.
serves 6
for the crust:
10 chocolate cream-filled sandwich cookies (Oreo if youre not GF, Glutino brand if you are)
3 tablespoons butter, melted (I always use salted butter even when baking because Im a rebel)
for the filling:
2 (8-ounce) blocks cream cheese, room temp
1/2 cup sugar
2 large eggs, room temp
1 tablespoon all-purpose flour (I use Pamelas Baking mix as my GF AP flour. General Mills has a new GF Bisquick that would work)
1/4 cup heavy cream
1 teaspoon vanilla extract
10 chocolate cream-filled sandwich cookies, crushed (Oreo if youre not GF, Glutino brand if you are)
The Directions.
Use a 6-quart slow cooker and inserted oven-safe dish that can fit all the way inside of the stoneware. Youre going to use the cooker as a bain-marie, or water bath. I used a 1.5-quart oval Corningware.
In a zippered freezer bag, crush ten cookies until they are teensy crumbs. Pour the melted butter into the bag and squeeze around until its combined. Press this crumb mixture into the bottom of your inserted casserole dish. This is your crust.
In a mixing bowl, cream together the cheese, sugar, eggs, flour, cream, and vanilla with a handheld or stand mixer. Crush the other 10 sandwich cookies (not into miniscule pieces, but small) and stir by hand into the batter. Pour batter ontop of the crust.
Add 1/2 to 1 cup of water into the empty stoneware and slowly lower the casserole dish in, being careful not to slosh water into your cheesecake.
Cover and cook on high for 2 to 3 hours, checking after 1 hour. Your cheesecake is done when the edges are no longer shiny and have begun to brown. Lightly touch the center to see if its set (if you get a lots of gunk on your finger, its not set!).
Unplug the cooker, and let the cheesecake sit in the cooker uncovered for one hour before removing and transferring the dish to the refrigerator. Cool completely before slicing and serving.
The Verdict.
Gee, we all liked this----surprise, surprise! I have no made quite a few cheesecakes in the slow cooker, and love serving them to my friends. Im giddy each and every time at just how simple the process is, and how little room for error crockpotting has with such a delicate dessert.
yay for cheesecake!
yay that Glutino makes gluten free Oreos!
day 3 of Crocktober
today, my big girl turns nine. This is what we did two years ago.
